Mussels in White Wine
   1kg mussels

   2 tbsp extra virgin olive oil
   1 onion, chopped
   250ml dry white wine

In a big pot, saute onion in olive oil, and once the onion has softened a little, add the wine.
   Tip the mussels into the pot and cover with a lid. Cook for about 4 minutes, jiggling the pot occasionally without removing the lid.
   Once the four minutes is up, the mussels should be open and ready to eat. In any case, if you start eating those that are open, the stragglers should be ready by the time you get to them.
   Accompany with chips and aioli (garlic mayonnaise). We roasted little chat potatoes that we tossed in olive oil and chilli/salt flakes.
